Captain’s Bar beer is a collaboration between Young Master and The Mandarin Oriental Hong Kong and is exclusively available at its iconic namesake bar. It is an unfiltered and unpasteurized lager brewed with all German malt and European style hops. Rooted in classic brewing traditions but with a contemporary craft twist, this beer is served in traditional tankards all year round.

The Young Master Classic

A true classic that won’t ever go out of fashion. The Classic is designed to be versatile – you can drink this all day and in all seasons. We’ve taken careful measures to create an elegant balance of malts and hops in this pale ale. The result is just enough malty richness, paired with a thirst-quenching blend of North American and Australian hops. We employ late additions and dry hopping to bring out its delightful fruity, floral and zesty aroma.

The Rye on Wood

Inspired by the flavor profile of Rye Whiskey, this is a rich malt forward ale, aged with medium toasted new American oak. We use a large amount of rye in the mash bill along with pale and caramel malts for a beer with a silky mouthfeel and malty flavor profile with a light edge of spice. We like drinking this one neat, or with a citrus peel (orange and grapefruit work well) and a dash of bitters.

Island 1842 Imperial IPA

The Island 1842 is an Imperial IPA designed for those who prefer a bold and powerful drink. Our goal with this beer was to coax out and showcase every nuance that our outsized malt and hop bill had to offer. This beer’s hop character is potent with additions in the first wort, constantly through the boil, at flameout and then generously during fermentation. In order to balance the strong hop profile, we built an appropriately robust malt backbone. The moment you pour Island 1842 into your snifter, expect a powerful nose of spicy, floral and zesty hops. The complexity of flavor will then continue to unfold with each sip and the flavor will linger on the palate.

Its brewed with unmalted wheat, scented with aged Mandarin Orange Peel (Chen Pei / 陳皮) and gently spiced with our own proprietary 5 blend featuring zedoary, coriander seeds, chrysanthemum, chamomile and white pepper.

Festbier (Fall Seasonal)

Festbier is our fall seasonal, a toasty and full-bodied lager, brewed for a festive time. The style is inspired by the beer you find in modern-day Oktoberfest in Bavaria and is distinct from the Märzen style which historically was more common. Our take has an orange / gold hue from a complex German malt base featuring Pilsner, Munich and Amber malts. We balance the malt flavor with just enough noble style hops and then age it longer than all our other beers for a well-rounded depth of character. Enjoy it while it lasts.

Hong Kong Black

In our home-brewing days, we made this one specifically for the Hong Kong winter. We are glad that the judges at Hong Kong’s first homebrew competition enjoyed it just as much as we did and awarded it the first place in 2013. We blend 6 malt types to impart rich notes of caramel, chocolate and coffee to this brew but at the same time we exercise some restraint to avoid making it overwhelming. We like the resulting balance that suits local winters that are cool, but relatively mild. We finish this beer with a blend of floral and spicy hops to round out the flavors.

Tai Sui / 太歲

According to folklore, Tai Sui (太歲), was a magical monster that regrew whenever eaten. In essence, it was a little like a baker’s sourdough mother, alive with life forms from its surroundings. This bottle captures the life work of these beings in beer form. A take on a rye sourdough bread, this is a rye ale fermented using Gregoire Michaud's sourdough starter, which started in Hong Kong. It is dry, has a rye & oak kick with a touch of sourness and bit of funk.

RyeØ
(Rye Whiskey Barrel Aged)

RyeØ is an intense rye wine, aged in freshly emptied rye whiskey barrels for 9 months. After the aging process, we hand-bottle and condition it with fresh batch of bourbon yeast for a second fermentation. We let the complex rye, oak and malt flavors marry over time and gain complexity. This is a labor, time and ingredient-intensive process, which means we can only make this special beer once in a while, when all the stars align. Individually numbered bottles will be available on a limited edition basis. Check back regularly or contact us for additional details and dates of release. Enjoy it now or store in your cellar for an extended period of time.

Summer of 1842 is a session IPA usually only available in a cask-conditioned, real ale form at very select locations. Prior to releasing this in Hong Kong, we brewed this recipe as a collaboration in the UK, the home of traditional real ales.

Cha Cha Soba Ale

Evoking the earthy flavors of a bowl of chilled cha-soba, this specially brewed ale promises to be refreshing. We use locally sourced organic buckwheat and employ a special mashing process to make sure we get the most out of it when combined with our house base malt. We finish with a gentle infusion of premium matcha. We’ve all heard that soba is good for you, with its bioflavonoids and such, and this brew doubles down on that aspect with the addition of green tea. At the end of the day though, we drink the Cha Cha Soba Ale just because it tastes incredible – dry and refreshing, yet intensely flavorful.

It is a potent makrut lime leaf infused IPA generously hopped with Sorachi Ace and Equinox for an intense lemony, citrusy hop profile. Batch #2 of the Citrus IPA series was brewed in Hong Kong at the Young Master Brewery in Ap Lei Chau.

Buddha’s Bold Gesture

Boxing Cat and Young Master have teamed up for the first collaboration brew of its kind made in one country across its two systems. Buddha’s Bold Gesture is a potent citrus IPA infused with the aromatic Buddha’s Hand Citron and its name aptly derives inspiration from the symbolic hand gesture, “abhaya mudra” that represents fearlessness. It is generously hopped with warrior, summit, saphir and pacifica at every stage of the brewing process for a hop flavor that perfectly complements the refreshing aroma from the citrus infusion. Batch #1 was brewed in Shanghai at the Boxing Cat Brewery.

Siu Sauvin /小麥芬

Result of a unique collaboration with Renaissance Brewing Company of New Zealand, Siu Sauvin is an intensely aromatic Single Hop White IPA. We brewed it exclusively with Nelson Sauvin hops, which impart delightful floral and fruity flavor notes reminiscent of crushed gooseberries and elderflower. We built this “white-wine like” hop profile on top of an appropriately “white” malt base that includes a significant amount of wheat. This is the first collaboration craft beer ever brewed in Hong Kong and is a one-time only limited edition. It will not last very long, so enjoy it while you can!
